Founded in 2015 by David Croll and Marcin Miller, the facility is situated in Minami-Ku, in southern Kyoto City, nearby the famed Fushimi region, known for centuries for its production of nihon-shu (Japanese sake). Ki No Bi was launched in 2016…

    Ki No Bi which translates to “The Beauty of the Seasons,” is made using locally sourced ingredients and incredibly meticulous craftsmanship. The production process is overseen by Masami Onishi, a former Chief Blender, and Suntory, and Head Distiller Alex Davies, a former distiller at Chase and Cotswold distilleries.

    This incredibly distinctive Japanese gin is a balanced rice spirit based, blend of 11 botanicals including yellow yuzu from the north of Kyoto Prefecture, hinoki wood chips (Japanese cypress), bamboo leaves, gyokuro tea from the Uji region and green sanshō (Japanese peppercorn) berries. The gin is pot distilled, using a steeping technique to infuse the botanicals into the spirit for several hours. Post-distillation the elements are blended and cut to proof at 45.7% ABV using water sourced from underground Fushimi. This special Kyoto dry gin was awarded a Gold Medal in the ‘Contemporary Gin’ category at the 2017 IWSC awards.

    Situated in a former microbrewery on a west London street in England, Sipsmith Independent Spirits Distillery is home to London's first new gin in nearly two centuries. The distillery was founded by a triumvirate — Sam Galsworthy (who previously worked at a microbrewery), Fairfax Hall (a former Diageo representative) and Jared Brown (a master distiller who has crafted new spirits in Vietnam, Norway, Sweden and the United States) — with the goal of producing a traditional yet authentic craft gin.

    Sipsmith London Dry Gin is crafted using ten carefully selected botanicals, including Macedonian juniper berries, Bulgarian coriander seed, French angelica root, Spanish liquorice root, Italian orris root, Spanish ground almond, Chinese cassia bark, Madagascan cinnamon, Sevillian orange peel and Spanish lemon peel. "The best botanicals make the best gin — no way around it," says Brown, who has been distilling spirits for over a dozen years.

    Once the botanicals arrive at the distillery, they are distilled through a copper-pot still named Prudence (Prudence is able to produce approximately 280 bottles of gin each day). "Prudence is the first copper still installed in London in nearly 200 years. We designed her with Germany's oldest distillery producers, Christian Carl — a small, family business that has been crafting stills since 1869. She is the only one like this in the world. "The still is designed with a bespoke pot, column still and carter head, which makes it incredibly versatile.”

    Sloe berries are a hedgerow fruit in the plumb family. Rarely consistent berry seasons yield annual harvests that almost always vary, due to the unpredictable English climate. This variety in harvest is a trait very characteristic of wine, in that each vintage batch that is produced has its own unique character. Each autumn Sipsmith picks their sloe berries, which are then frozen and steeped in their London Dry Gin, for three to four months. This process gives the gin a “jammy, marzipan flavor…The result is a truly handmade sloe gin that is subtle, complex and bursting with flavour” (Sipsmith).

    The Malfy distillery is located in Moncalieri, situated just outside of the city of Torino; the region is renowned for its production of wines, spirits, and liqueurs. Torino Distillati was established in 1906. To this day the distillery is run by the Vergnano family; Carlo and his wife Piera as well as their children Rita and Valter. This family-owned producer has been manufacturing spirits for several generations.

    The gin is distilled by Master Distillers Denis Muni and Beppe Ronco. When Malfy gin was brought to the US in 2016 it was the first Italian gin to be imported there. In 2019 the brand was acquired by Pernod Ricard from its former owners Biggar & Leith. There are currently 4 gin expressions in the lineup: The Originale, the lemon-flavored Con Limone, the pink grapefruit Gin Rosa, and Con Arancia with blood oranges.

    It took over 70 years after the prohibition had ended for the distilling industry to return to New York City. New York had a flourishing distilling industry by the early 19th century, however things changed during the Civil War, when President Lincoln taxed spirits to fund the military. This resulted in many distilleries going underground before the end of the century. The fatal blow for the legal distilling industry in US came in 1920, when the Eighteenth Amendment came into effect making the production of alcohol illegal. It was only in the 21st century that small distilleries started resurging in New York.

    The New York Distilling Company, located in Williamsburg, Brooklyn, is one of the oldest distilleries in the city, and was founded in 2011 by Tom Potter, a co-founder of the Brooklyn Brewery, and Allen Katz, one of the nation’s leading experts on distilled spirits and cocktails. The distillery specializes in gins and rye whiskeys and has been one of the pioneers of the city's distilling renaissance that builds upon the pre-prohibition heritage. Gin distilling in New York began in the 17th century, when Dutch settlers of New Amsterdam (as New York was then called) started making a version of the Dutch spirit genever. However, it wasn't until the early 19th century when the first commercial gin was produced in the US. Gin was a popular drink during the prohibition, as it was simple to make. American gin is a bit different from London and other European gins as a result of using other botanicals.

    Perry’s Tot is a navy strength gin named after Matthew Calbraith Perry, who served as a Commandant of the Brooklyn Navy Yard in the 1840s. Navy strength means that if this 57% ABV American gin was accidentally spilled over some gunpowder, the gunpowder would still ignite.
